FI: Villit ja vastuullisesti kasvatetut suomalaiset raaka-aineet ovat keskiössä Nokan keittiössä. Nokassa arvostetaan käsin tekemistä, kunnioitetaan jokaista raaka-ainetta ja kiinnitetään erityistä huomiota ruokahävikin minimoimiseen. Villejä raaka-aineita käytetään Suomen metsistä ja vesistä: riistaa, kalaa, marjoja, sieniä, kasveja ja yrttejä.
Käytössä on myös vain vastuullisesti kasvatettuja luomuvihanneksia ja -lihaa huolella valituilta suomalaisilta pientuottajilta, joiden kanssa Nokka on luonut läheiset suhteet vuosien aikana.
Kesällä Nokka avautuu Itämerelle ja vain kiven heiton päässä keskustasta on kaupungin kutsuvin terassi.
Nokka sai Michelinin vihreän tähden vastuullisuus- ja ympäristöasiat huomioivasta toiminnastaan vuonna 2024.

De färska råvarorna, som köksmästaren Ari Ruoho noggrant valt ut, spelar en central roll i restaurang Nokkas berättelse. Råvarorna kommer från finska småproducenter.
EN: Wild and sustainably grown Finnish ingredients are the core of Nokka’s cooking. At Nokka, everything is made by hand, each ingredient is given the respect it deserves, and extra attention is paid to minimize food waste. Wild ingredients from Finnish forests and waters are used: game, fish, berries, mushrooms, plants and herbs. Only sustainably grown, organic produce and meats from carefully selected small Finnish producers are on menu.
In summer, Nokka opens out towards the Baltic Sea and offers what is undoubtedly one of Helsinki's most inviting outdoor patio areas, just a stone's throw away from the city centre.
Nokka was awarded the Michelin Green Star for sustainable gastronomy in 2024.
